~ Wrap your cake with two layers of plastic wrap and then two layers of aluminum foil. (making sure air is not able to reach the cake)
~Place cake in the refridgerator over night or for 24 hours. (this makes the cake solid and brings the whole cake to the same tempature)
~Place cake in the back of the freezer (you do not want the cake in area where warmer air or tempature change can affect it)
~2 days prior to your anniversary take the cake out of the freezer and let it defrost in the refridartor
~the day of your anniversary place the cake on the kitchen counter and let it come to room tempature
